Episode 9: Galentine’s Day
Who needs boys when you can have gal pals?! Honestly think I could live my whole life without a man, but a whole life without my besties? Yeah NO THANK YOU!! In this episode of So Cluckin’ Good we celebrate the girls with some fun Galentine’s Day recipes including chocolate strawberry bites, heart shaped pizzas, animal cracker sugar cookies, slutty brownies, mac and cheese gnocchi bread bowls, and the best raspberry mocktail I have ever had. RECIPES:
Raspberry Mocktails
Ingredients:
Raspberry Sorbet
Raspberry Drink (we used Raspberry Poppi)
Raspberries for garnishing
Directions:
1) Place a scoop (or two) of the raspberry sorbet in a cup.
2) Pour your raspberry flavored drink over the sorbet.
3) Add raspberries on top. ENJOY.

Chocolate Strawberry Yogurt Bites
Ingredients:
Chocolate chips for melting
Strawberries, diced
Yogurt (we used plain Greek yogurt, but honestly think vanilla Greek Yogurt might have better flavor)
Directions:
1) Mix together strawberries and yogurt in a bowl.
2) Spoon dollops of mixture out on a parchment paper lined baking sheet.
3) Place in the freezer for several hours until completley frozen.
4) Once frozen coat in melted chocolate and then place back in freezer. (For ours we didn’t have to freeze them again after adding the chocolate because the strawberry dollops were cold enough on their own!)
Store leftovers in freezer.

Heart Shaped Pizzas
Ingredients:
Pizza Dough:
4 to 4 1/2 cups flour
1 tbsp sugar
2 tsp salt
2 1/4 tsp quick rise yeast
1/2 cups warm water (105F-110F)
3 tbsp olive oil
Pizza:
Pizza Sauce
Mozzarella Cheese
Toppings (pepperoni, sausage, etc)
Directions:
1) Preheat oven to 450F
2) Combine 4 cups flour with sugar, salt, and yeast in a mixing bowl and whisk together.
3) Add the water and olive oil. Mix until blended. If it is too wet, gradually add enough flour to make a soft dough. The dough should be slightly sticky.
4) Transfer the dough to a floured surface and knead until smooth, about 5 minutes.
5) Place the dough in greased bowl and let it rest onthe counter for 10-15 minutes if using quick rise yeast or for 60-90 minutes if using standard instant yeast. The dough should double in size.
6) Roll out your dough and shape it into a heart.
3) Top with sauce, cheese, and whatever toppings you want.
4) Bake in oven at 450F for 12-15 minutes.

Heart Shaped Iced Animal Cracker Sugar Cookies
Ingredients:
Iced Animal Crackers
Valentine’s M&Ms
Valentine’s sprinkles
2 1/2 cups flour
2 tsp baking powder
3/4 tsp fine sea salt
2 sticks unsalted butter at room temperature
1 1/4 cups granulated sugar
1 large egg plus 1 egg yolk
1 tsp vanilla extract
Directions:
1) Preheat oven to 350F.
2) In a medium bowl whisk together the flour, baking powder, and salt to combine.
3) In a large bowl use an electric mixer to beat the butter and 1/4 cup sugar until light and fluffy, about 2-3 minutes. Add the egg, egg yolk, and vanilla, and beat until combined. Slowly beat in the flour mixture.
4) Add in diced animal crackers, m&ms, and sprinkles.
5) Place the remaining 1/4 cup sugar in a shallow bowl. Divide dough into balls then roll in sugar to coat evenly. (We skipped this step because we thought our dough tasted sweet enough for us)
6) Bake for 10-12 minutes

Slutty Brownies
Ingredients:
Pillsbury Valentine’s Day Place and Bake Cookies
Oreos
Boxed Brownie Mix
Directions:
1) Line a muffin tin with cupcake liners.
2) Place a Pillsbury cookie in the bottom of each liner.
3) Place and Oreo on top of each Pillsbury cookie.
4) Mix brownies according to box instructions and then pour over your stacked cookies.
5) Bake at 350F for 20-25 minutes.

Mac and Cheese Gnocchi Bread Bowls
Ingredients:
Mac and Cheese Gnocchi:
1 lb gnocchi
1 tbsp butter
1 tbsp flour
1 1/2 cups milk
1 1/2 cup shredded cheddar cheese
1/4 cup shredded mozzarella
1/2 tsp salt, pepper, garlic powder, and onion powder
1/4 tsp paprika
Directions:
In a pot of boiling water cook gnocchi until they start to float, about 3-5 minutes.
Add 1 tbsp butter to a pan and melt.
Add 1 tbsp flour and mix until all coated (about 1 minute)
Add milk and mix for about 3-4 minutes.
Add in cheeses and mix.
Add in seasonings and mix untill sauce is uniform.
Add your cooked gnocchi and coat.
Add mac and cheese to bowls and serve.
