Peanut Butter Banana Muffins

Ingredients:

4 ripe bananas - mashed

1/2 cup peanut butter

1/4 cup pure maple syrup

2 eggs

1 tbsp vanilla extract

1 1/2 cup flour

1 1/2 tsp baking soda

1/2 tsp kosher salt

1 cup chocolate chips

Directions:

1) Combine all the above ingredients.

2) Spoon into muffin tin and bake at 350 degrees for 12-15 minutes.

Cajun Hashbrown Breakfast Bowls

Ingredients (per bowl):

1 cup hashbrowns - air fry at 400 degrees for 10 minutes, shake, resume cooking 5-10 minutes

Peppers (optional)

Egg Beaters Egg Whites - cooked

1/2 of turkey kielbasa - sliced - air fry at 370 degrees for 7 minutes

Shredded cheese

Chipotle Sauce - for topping

Directions:

1) Combine all above ingredients and enjoy!

Potato Taco Bowl

Ingredients:

1.5 lbs Yukon Gold Potatoes

1 lb lean ground beef

extra virgin olive oil

Taco seasoning

Directions:

1) Dice potatoes and add olive oil and taco seasoning.

2) Mix together and then place on baking sheet to bake at 425 degrees for about 30-35 minutes.

3) Cook hamburder and then add in taco seasoning.

4) Once everything is done cooking, assemble your bowls!

Brisket Tacos

Ingredients:

3 lbs Brisket - seasoned with 1.5 tbsp chipotle powder, 1 tbsp paprika, dried oregano, and ground all spice, 1 tsp coriander

2 tbsp olive oil

6 minced garlic cloves

1 sweet onion - diced

3/4 cup orange juice

1 lime

14 oz crushed tomatoes

2 tbsp chipotle adobo sauce

2 cups beef stock

salt and pepper to taste

Street Corn:

4 ears corn, husked and grilled in skillet

3 tbsp mayo

1 garlic clove - minced

1 lime - zest and juice

1/3 cup scallions - sliced

1/3 cup grated cojita cheese

1/4 cup minced cilantro

1 jalepeno - diced

1/2 tsp chili powder

1/4 tsp salt

Directions:

1) Combine spices and rub on all sides of brisket.

2) Place brisket in slow cooker on low adding in rest of above ingredients and seasonings.

3) Cook for about 5-8 hours, or until brisket is easy to shred.

4) Combine ingredients for street corn together in a bowl.

5) Assemble tacos with brisket meat and street corn in tortillas.
